French Press Method
A medium grind works well with the French Press method. A general rule of thumb is using 1.23 oz/ 35 g of beans for every 16 oz/475 ml of water. Or 1 tablespoon of ground coffee for every 1 cup of water. Always use the purest water you can, it makes a difference. Investing in a good grinder is worth every cup you will enjoy forever after.
Pour the water over the coffee once just off the boil, that way you avoid scorching the coffee. Let it infuse for about 4 minutes, stir gently, and let it continue to infuse for up to 3 or 4 minutes longer, to your liking. Then press the coffee when ready to serve.
Cotopaxi volcano is just one of the volcanoes in this region of the Andes mountains where the coffee is cultivated.
