Baked Oatmeal with Maple and Orange
Ingredients
Wet ingredients:
- 2 eggs
- ⅓ cup maple syrup
- Zest of 1 big orange
- ½ cup (100 g) freshly squeezed orange juice
- 1 tablespoon (14 g) melted butter, vegan butter, or melted and cooled coconut oil
- 1 ¼ cups (200 g) milk (choose the milk of your choice)
- ½ tablespoon vanilla extract
Dry ingredients:
- 2 cups (190 g) Schullo Organic Thick Rolled Oats
- 1 teaspoon baking powder
- ¼ teaspoon salt
Orange yogurt topping:
- 2 tablespoons (28 g) Greek yogurt (plain or vanilla)
- 1 tablespoon (7 g) maple syrup or honey
- 1–2 teaspoons fresh orange juice, to thin
- ½ teaspoon orange zest
- ¼ teaspoon vanilla extract
Preparation:
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan with oil or nonstick cooking spray, and set aside.
- In a large bowl, whisk together the eggs, maple syrup, orange zest, orange juice, melted butter, milk, and vanilla extract until well combined.
- Add the dry ingredients to the bowl with the wet ingredients: oats, baking powder, and salt. Mix until well incorporated.
- Pour the batter into the prepared pan and smooth the surface. Bake for 40–55 minutes or until the edges are lightly browned and the center is set. Remove from the oven and let cool for 10 minutes while you prepare the orange glaze.
To make the vanilla-orange glaze: In a small bowl, combine the Greek yogurt, powdered sugar, orange juice, zest, and vanilla; mix until combined. Add more orange juice if needed to thin it out so you can drizzle it over the oats. Drizzle over the oats, cut into 6 portions, and serve.
