Penne Rustiche is primo grano pasta made from heirloom wheat. Rustichella d’Abruzzo began partnering with local wheat farmers in the Abruzzo region to revive some near-extinct heirloom summer wheat varieties, such as Mongibello, Varano, and San Carlo. Every year in the Vestina area of Abruzzo, 100 hectares are sown with the heirloom variety of wheat to make only 6 different types of traditional pasta.
