Dark Chocolate Covered Pumpkin Seeds
Ingredients:
- 1 1/2 cups pumpkin seeds
- 3/4 cup organic chocolate chips
- 1 teaspoon ghee or coconut oil
- 1/2 teaspoon natural vanilla essence
Preparation:
- Melt the dark chocolate chips in a double boiler with ghee or coconut oil, stirring until smooth and fully combined.
- Add the pumpkin seeds and coat them in your melted chocolate until they are completely covered.
- Use a spoon to scoop them onto a tray lined with wax paper or parchment paper.
- Put them in the freezer for 30 minutes to 1 hour (until they are firm).
- Enjoy!
