This Spanish Hot Smoked Paprika is dried traditionally over indirect-heat oak fires for 10 to 15 days and finished over a slightly warmer fire for three more days. The process dries the ripe peppers, preserving flavor and color and imbuing them with the classic smokiness typical of the region.
Freshness is key to the flavor profile of this vibrant crimson powder from Las Hermanas, as the peppers—all from local farmers in La Vera with a longstanding relationship to the company—are smoked immediately upon harvesting.
