Peanut Butter Cookie Bars
Wet ingredients
- 2 eggs
- 1 cup Schullo Raw Sugar
- ¾ cup Schullo Peanut Butter
- ¼ cup melted and cooled coconut oil
- 1 tsp vanilla extract
Dry ingredients
- 1 cup almond flour
- ½ cup Schullo Rolled Oats (if you prefer thicker bars, use ¾ cup)
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup Schullo Organic Chocolate Chips, divided
Instructions
- Preheat the oven to 347 F (175°C) and prepare an 8×8-inch baking pan
- In a large bowl, mix the eggs, sugar, and peanut butter until creamy. Then add the coconut oil and vanilla and mix again. There should not be any separation of oil
- Add the dry ingredients: almond flour, oats, baking soda, and salt, and mix until well combined
- Finally, fold in the chocolate chips, reserving a little to sprinkle on top
- Pour the mixture into the pan and spread it evenly with a spatula toward the edges. Sprinkle with the remaining chocolate chips
- Bake for 20–25 minutes or until the edges are golden brown.
(They should be slightly moist on the inside)
Tip: Once they come out of the oven, sprinkle them with sea salt and let them cool for 15–20 minutes before cutting them so they don’t crumble.
